Wooden Barrel BBQ Smoking Times and Temperature Chart

Here is a handy chart with smoking temperatures and times for a variety of common meats. This chart is especially designed for BBQ beginners who need approximate times and temperatures.

Please remember that BBQ smokers vary and other factors, such as weather conditions, wind, and ambient temperature can change the cooking time by as much as an hour or more.

Cooking times will vary. Try not to lift the lid any more than necessary. Insert a temperature probe into the holes in the top and sides of the barrel to determine barrel cooking temperature, then stick a temperature probe into your meat to determine how well it is done.

These figures are approximate. Use them as guidelines only. As you get more experience at the smoker, you can judge it by the appearance of the meat and go by the times and temperatures that work best for you and your cooker.
